Air-fried zucchini parmesan chips are a healthy dinner favorite. If you like fried and baked, then prepare to satisfy your cravings guilt-free.

INGREDIENTS

1 teaspoon salt, adjust to taste
1 teaspoon pepper, adjust to taste
1 tablespoon Italian seasoning
1/2 cup flour
2 large eggs
1 cup panko rusks or Italian breadcrumbs
1/3 cup Parmesan cheese
1 teaspoon spray oil

INSTRUCTIONS

Mix flour, salt, pepper, and Italian seasoning in a large bowl.
In a separate small bowl, beat the eggs and set aside.
In a separate bowl, mix the breadcrumbs with the Parmesan cheese.
Cut the squash into 1/4-inch thick rings. Dip each circle in the flour mixture, then the egg mixture and the panko/parmesan breadcrumbs.
Coat the air fryer basket with cooking spray and arrange the squash in a single layer in the basket. Lightly spray the top of the zucchini chips with cooking spray.
Air baked at 400°F for 5 minutes. Turn the squash over and air fry for 5 minutes or until golden brown.
