Keto lemon bread with almond flour

Ingredient for Blueberry Lemon Keto Bread
2 1/2 cups finely ground almond flour
1 cup sugar substitute
2 teaspoons baking powder
1/2 teaspoon sea salt
8 whole eggs
8 ounces full-fat cream cheese, room temperature
2 teaspoons lemon extract
1/2 cup unsalted butter at room temperature
2 cups fresh or frozen blueberries
1 tablespoon of lemon peel
Keto Lemon Glaze
3/4 cup confectioner’s sugar substitute
3 tablespoons of fresh lemon juice
2 tablespoons of heavy whipping cream
1 teaspoon lemon extract
2 teaspoons of lemon peel

Preheat the oven to 350 degrees.
Grease a 10-by-5-inch loaf pan or two 6-inch pans with parchment paper. (Note if you are using two smaller pans, check for doneness at the 35-minute mark)
In a medium-sized bowl, mix the almond flour. Add to the sifted flour baking powder and sea salt and stir. Put this aside.
In a large bowl using an electric hand mixer or a stand mixer, mix butter, cream cheese, and sugar substitute until the mixture is lightly fluffy.
Next, add 8 eggs one at a time, making sure to scrape the bowl several times.
Add lemon extract and lemon peel.
Add the dry ingredients to the wet mixture and blend until well combined.
Place the blueberries in the baking mixture.
Spread the mixture on a greased loaf pan.
Bake for 60-70 minutes or until the toothpick comes out clean.
Let the loaf cool in the pan for 30 minutes before removing it from the pan. Then let the pan cool on the baking rack for at least 60 minutes before adding icing, refrigerating, or freezing.
Keep leftovers in the fridge for up to 5 days or freeze for up to 3 weeks
Keto Lemon Glaze

To make the lemon glaze, you should combine the confectioner’s sugar substitute, lemon juice, lemon extract, lemon peel, and heavy whipping cream. Stir until completely mixed.
